I love the Kalita because it's foolproof, but also very instructive — it tells you a lot about what you're brewing and isn't as unforgiving as a Chemex or a V60. I'm sort of all about flat-bottomed brewers for that reason: they're really difficult to mess up, but can also be really helpful when you're trying to figure out things like grind size and pouring speed.
Your writing is lovely. And you are far and away more knowledgeable than I think you realize--I've never heard of the method you describe above. Makes me want to go make a cup right now. ☕

I love food as well and there is something to be said about how working in and tasting coffee every day has made me appreciate the food that I eat even more.
